London Almond cookies

London Almond cookies



my cookies with lot of chocolate n crushed almonds

Finally on the 10th Syawal, I managed to make my kids favorite cookies....traa daa.....London Almond Cookies.
My own recipe:

250gm butter (softened at room temp)
1/2 cup icing sugar
2 cups Red Rose Flour
1/2 cup ground almond
1 egg
2 tsp emplex
1 tsp vanilla essence
150 - 170 pieces of whole almonds (to be toasted for a while)
Crushed almonds for deco
Cooking chocolate
Small paper cups

Methods:
1. Mixed butter and icing sugar
2. Add egg and vanilla essence
3. Add in dry ingredients, mixed well to a soft dough
4. Wrap each whole almond with soft dough, place in the paper cup and bake for 20 minutes
5. Melt cooking chocolate using double boiler method.
6. Scoop melted chocolate into the cookies cup and sprinkle with crushed almonds
